It's All About the Mushrooms!

Nourishing Greens ~Mushroom Rice

Who doesn't love mushrooms? This superfood has so many health benefits that it has been used for medicinal purposes for centuries. It's known to have cancer-fighting properties and helps boost your immune system, too. Mushrooms are a great source of fiber and protein which makes it ideal for plant-based eaters. There are so many varieties of mushrooms, some known to be more exotic, but even if you eat the good 'ole white button mushroom, you will reap the benefits!


I love using mushrooms in a variety of dishes. I use them in soups, salads, rice & quinoa bowls.




For this recipe, I actually used white button mushrooms which gave this wild rice mix a great flavor! It's a great side dish to make during the busy work week. It's so fancy looking, no one will ever guess how easy it was to make!


Ingredients

1 C. Rice (Blend of Wild Rice/White Rice) or (White Long Grain Rice)

2-2 1/3 C. Water or (1 1/2 C. of Water if using White Long Grain Rice)

2 T. Butter

1 lb. Mushrooms, Cleaned and Sliced

Salt

Handful of Microgreens


Preparation

With a damp cloth, gently wipe off any excess dirt off of the mushrooms. Remember to not wash the mushrooms to avoid excess water retention. Once cleaned, slice the mushrooms evenly and set aside. In a saucepan, melt some butter and add the mushrooms. Cook until soft, about 5-8 minutes. Add the rice, then add water. Add the salt, then cover with a lid and cook until done, about 40 minutes. To serve, sprinkle a few strands of micro greens for extra nutrients.
